Oatmeal Bread

My next recipe to try in the bread machine was Oatmeal Bread. So far this is the yummiest bread I have made so far. It is really simple, but tastes good. The recipe came from the Betty Crocker bread machine recipe book.

Ingredients
1 1/2 lb
1 1/4 cups plus 2 Tablespoons milk
2 Tablespoons butter, softened
3 cups bread flour
1/2 cup oats (either old fashioned or quick cooking)
3 Tablespoons packed brown sugar
1 1/4 teaspoon salt
2 teaspoons yeast

2 lb
1 1/2 cups milk
2 Tablespoons butter, softened
4 cups bread flour
2/3 cup oats
1/4 cup packed brown sugar
1 1/2 teaspoons salt
2 teaspoons yeast

Place all ingredients in bread machine pan in the order suggested by manufacturer. Select Basic/White cycle. Light crust.

Bread Machine: White bread

Charles has become a fan of bread pudding. We have had it a couple times recently at restaurants. There are so many different kinds! I decided to try my hand at it, but first I had to make the bread with our handy dandy bread machine! I kept it simple and made regular white bread.

The first time we attempted the bread we were not paying attention to it and it needed more water. By the time we realized this it was too late to add any more. The bread came out looking pretty funny. Charles still ate the soft, white middle.

The second time I made it I was more vigilant and everything came out great!


I followed a Pinterest recipe, but it was not too different from the recipe in my bread machine's manual. Here is a link to the one I used: Easy Bread Machine White Bread

Ingredients
1 cup warm milk (microwave about 1 minute)
3 cups bread flour
1 teaspoon salt
2 teaspoons yeast
2 Tablespoons butter, cut into 4 pieces
(you may need to add extra water. I added about 1 1/2 Tablespoons)

Add ingredients in the order listed. Make a well in the middle to add yeast. Tuck the butter pieces into the 4 corners.

Set for basic/white cycle, Medium crust, and 1.5 lb loaf.

Easy Cannolis

I love Italian food! Charles and I were just discussing this over chicken parm and Gorgonzola risotto on Saturday. (We found what is to be my favorite Italian place in town). It always surprises me when people say they do not care for Italian food. Who does not love pasta, cheese and tomato sauce? I know there is a lot more to it than that, but so much of Italian food is some variation on those three things.

One of the best Italian desserts is cannolis. I have never attempted to make real homemade cannolis. I think my aunts on my Dad's side do. It would just be too much work, although probably well worth it. I saw a recipe on Pinterest (of course) for mini cannoli cups and it looked pretty easy so I gave it a shot.


They turned out to be just as easy as they looked and quite yummy. Visit Cooking with Sugar's blog for the directions: Mini Cannoli Cups. Here is the recipe again.

Ingredients
For cups
1 refrigerated pie crust (if you're smart you'll use Immaculate Bakery or Trader Joe's and not Pilsbury)
3 Tablespoons Turbinado sugar (I just used regular sugar because I didn't want to buy one more thing)
1 teaspoon cinnamon

For filling
1 15oz container of ricotta cheese
1/2 cup powdered sugar
2 Tablespoons white sugar
1 teaspoon vanilla
mini chocolate chips or whatever else you want to sprinkle on top

To summarize the steps, you roll out the pie dough and sprinkle the cinnamon and sugar on top. Roll it in. Cut out circles and put into a mini cupcake tin. Bake. Then you mix the filling ingredients, except for chocolate chips. Pipe into cups and enjoy. For her steps, check out her blog. The end result is a simple and delicious Italian dessert!

Beer Nut Bread

For our second loaf of bread we chose Beer Nut Bread. The recipe came from a Betty Crocker Bread Machine cookbook that I borrowed from the library. I don't remember the last time I borrowed a book from the library. It came out really well and did not collapse like our first loaf! Here is how you can make it!

Ingredients:
For 1 1/2 lb
3/4 cup beer (it says you can use nonalcoholic beer)
1/3 cup water
3 Tablespoons packed brown sugar
1/2 cup shredded smoked cheddar cheese (we used regular cheddar cheese)
1 Tablespoon butter, softened
3 cups bread flour
3/4 teaspoon salt
1 1/2 teaspoons quick active dry yeast
1/2 cup salted peanuts

For 2 lb 
1 cup beer
1/3 cup water
1/4 cup packed brown sugar
2/3 cup cheddar cheese
2 Tablespoons butter
4 cups bread flour
1 teaspoon salt
1 3/4 teaspoons yeast
2/3 cup peanuts

Measure carefully, placing all ingredients except peanuts in bread machine pan in the order recommended by the manufacturer. Add peanuts at the Raisin/Nut signal. Betty Crocker recommends that if you do not have this signal, to add the nuts 5-10 minutes before the last kneading cycle ends. Your manual should be a guide on this.

Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles. Remove baked bread from pan, and cool on wire rack.

Bread Machine: Honey Wheat

We recently acquired a bread maker. Working with yeast doughs has always intimidated me, but we loved the idea of homemade bread. A bread maker was the solution!

Our first attempt came out pretty good, in flavor. It was not perfect, though. The recipe gave the option of a 1 or a 1.5 lb loaf. Since it was our first bread, we went with the 1 lb. After putting all the ingredients in, we realized our bread maker only allows for 1.5 or 2 lb loaves. Instead of wasting all the ingredients, we selected 1.5 lb to see what would happen. Our bread collapsed in the middle, but still tasted fine.

They will love you...

...if you make this cake! Over the weekend, I made Banana-Chocolate Chip Cupcakes with Peanut Butter frosting. I brought them into work on Monday and Tuesday and everyone cannot stop raving about them. I thought I would share!

The recipe is from Bon Appetit!

Ingredients
Cake:
3 cups flour
2 teaspoons baking soda
2 teaspoon kosher salt
1 1/2 cups sugar
1 cup unsalted butter, room temperature
1/2 cup packed brown sugar
3 large eggs
1 1/2 teaspoons vanilla extract
2 cups mashed very ripe bananas (I used 3 bananas)
1 cup sour cream
1 10-oz. bag mini chocolate chips (I just had regular chocolate chips)

Frosting:  
2 cups peanut butter (I used crunchy)
1 1/2 cups powdered sugar
1 cup unsalted butter, room temperature
2 1/2 teaspoons vanilla extract

Cake
Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl. Using an electric mixer, beat sugar, butter, and brown sugar in a large bowl until light and fluffy, about 3 minutes. Add eggs one at a time, beating to blend between additions and occasionally scraping down sides and bottom of bowl. Beat in vanilla.

Add dry ingredients; beat on low speed just to blend. Add bananas and sour cream; beat just to blend. Fold in chocolate chips. Divide batter evenly among pans; smooth tops.

I made as cupcakes, but the recipe instructions are for 8x8 cakes. Bake cakes until a tester inserted into the center comes out clean (about 22 minutes for cupcakes or about 35 minutes for cakes). Let cool completely.

Frosting
Using an electric mixer, beat ingredients in a medium bowl until a light and fluffy frosting forms, 2–3 minutes. Spread on cupcakes. My frosting was a little runny, but after sitting in the fridge it stiffened up and was perfect.

Bake-Off

For work I planned a Bake-Off as a resident event. Since I am also a resident I figured it would be OK if I participated. We had three categories--cake/brownies, cookies and pie. I entered one thing in each category:

Cake/brownies: Gooey Chocolate Brownies
Cookies: Lemon Glazed Cookies
Pie: Oatmeal Chocolate Pie

The Bake-Off was a hit! There were 10 entries in the cake category, 4 in cookies and 3 in pie. I ended up taking 2nd place in both the cookies and pie category.

It was really easy to set-up. This could be fun for a church, sorority or any other group event.

We gave out a first and second place prize in each category. The medals were ordered through TrophyDepot.com. We had them engraved with "The Properties at Wright Field." They turned out really great! First place also received a $25 gift card to Kroger. Second place was awarded a $15 Kroger gift card.
We had 4 judges, but residents could also place their votes.
Look at all those cakes! My brownies are the second item.

Scrambled Egg Cups

As I mentioned in a previous post, I recently made some Scrambled Egg Cups for the networking event I helped host at work. I wanted to have something to offer for those people who do not like sweet foods in the morning. They turned out quite yummy!




Here's the recipe: (from: Semi-Homemade Mom)

Ingredients:
12 eggs
6 slices of bacon (I was lazy and used bacon bits)
3 tablespoons milk (or half and half)
1/2 cup shredded cheese (the original recipe calls for cheddar. I used an Italian mix)
salt and pepper to taste (now that I think about it, I think I forgot these...oops!)

Preheat oven to 350 degrees.

Whisk together eggs and milk. Add in bacon, cheese and salt and pepper.

Pour into muffin tin (12 count).

You can sprinkle some extra cheese on top, if you want.

Bake for 15 to 20 minutes.

In the original recipe, she did not use any cupcake liners. If you are planning on doing that, you'll probably want to spray the tin with cooking spray. I used cupcake liners for an easier cleanup.

Strawberry Fudge Pie

Charles requested that I make a Strawberry pie. Strawberry Pie has never sounded appealing to me, but I looked on Pinterest for a recipe anyway. I came across one that looked amazing! It's called Strawberry Fudge Pie. So I thought I would give it a chance. I deviated from the recipe a little bit because it called for a brownie mix and I love my homemade Gooey Chocolate Brownies (follow the link for the recipe for just brownies).

Strawberry Fudge Pie

Ingredients:
One pie crust (I use Immaculate Baking Co. crust because it's amazing! You could always make your own, too)

Brownie Layer:
1/2 cup butter (1 stick)
2oz unsweetened chocolate
1 cup sugar
2 eggs
1/2 cup flour
1/4 cup chocolate chips

Cheesecake layer:
1 8oz package cream cheese
1/4 cup sugar
1 egg
1 teaspoon vanilla

Strawberry layer:
3 cups strawberries, halved

Make brownie layer. Combine butter and unsweetened chocolate in saucepan and melt over low heat. Add sugar; mix to combine. Remove from heat and let cool for 15-20 minutes. Preheat oven to 350 degrees. Once cooled, mix in eggs. Add flour and chocolate chips.

Pour brownie batter into crust-lined pie pan. Bake for 20-25 minutes. Brownie does not need to be completely done.

Meanwhile, make cheesecake mixture. Beat together all cheesecake layer ingredients. Once brownie layer is done baking, pour cheesecake mixture over brownie and carefully spread over the top. Bake the pie another 18 to 20 minutes at 350 degrees. Let cool for an hour.

Cut strawberries and place cut side down on top of cooled cheesecake layer. You can melt some chocolate and drizzle over the top to add a little extra touch, but I skipped this step out of laziness. Refrigerate for an hour.

Dessert Cheeseball

I love cream cheese! My husband, however, thinks cream cheese is gross. For the Friday before Christmas, we had a mini potluck at work. This gave me a great excuse to make a cream cheese based dessert--Chocolate Chip Cheeseball. Everyone at work loved it! (It is pretty tasty, if I must say so myself). It's probably been around blog world a million times, but just in case, here's the recipe:

Ingredients:
1 8oz package cream cheese
1/2 cup butter, softened
1/4 teaspoon vanilla extract
3/4 cup powdered sugar
2 Tablespoons brown sugar
3/4 cup mini chocolate chips (it's OK to use regular chocolate chips if that is all you have)
3/4 cup chopped pecans (optional)

Beat cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours.

After two hours, place mixture in plastic wrap and shape like a ball. Refrigerate for an hour.

Before serving, roll ball in pecans (optional). Serve with graham crackers. (Or just eat it straight...it's that good).

Chocolate French Toast

I discovered this recipe a few years ago and fell in love. Chocolate French Toast has been our Christmas breakfast tradition since Charles and I have been married. It's so easy and so yummy!


Ingredients:
1 cup milk
1 oz chocolate, chopped (you can use semi-sweet, dark or milk chocolate...whatever you like best)
3 large eggs
1 teaspoon vanilla extract
bread
2 Tablespoons butter

Place milk and chocolate in a microwave-safe bowl. Microwave until chocolate is soft, about one minute. Stir to combine and let cool.

In a large bowl, beat together eggs, vanilla and chocolate mixture.

On skillet, melt butter over medium heat. Proceed to make French toast as usual.

We love to serve this with fresh strawberries and powdered sugar!

Chocolate Cinnamon Snowballs

When I was in college, there used to be a local coffee shop called the Roasting Company. My husband (he was just my boyfriend at the time) and I went there one evening for a date night. We ordered cinnamon hot chocolate. It was so delicious and I have not been able to find anything like it anywhere else.

Today I was looking through the paper and the coupons. One of the ads had a recipe for Chocolate Cinnamon Snowballs. They look really yummy. And it seems like an easy Christmas cookie recipe. *Disclaimer: I have not made these, so I don't know if they actually taste as good as the picture makes them look. 

Ingredients
1 cup butter, softened (the recipe says not to use butter substitutes)
1 cup powdered sugar
2 Tablespoons cocoa powder
1 teaspoon vanilla extract
1 Tablespoon ground cinnamon
2 cups all purpose flour
Extra Powdered sugar

Directions
Preheat oven to 400 degrees.

Beat butter, powdered sugar, cocoa, vanilla and cinnamon with an electric mixer until light. Gradually add flour, mixing until just blended.

Shape dough into 1 inch balls. Place one inch apart on greased baking sheet.

Bake for 8 to 10 minutes or until lightly browned. Transfer from baking sheet to wire racks; cool slightly. Roll in powdered sugar; cool completely on racks. Re-roll in powdered sugar.

Caramel Apple Pecan Pie

A couple years ago, I found a recipe for a Caramel Apple Pecan pie (probably in a magazine, but I don't remember). It sounded so delicious! I decided to make it for Thanksgiving that year. When I took my first bite, I thought it was the most amazing apple pie I had ever tasted and decided to make it every Thanksgiving.

Tomorrow, after work, I'll be making this pie, but I wanted to go ahead and share the recipe with you. It's so easy to make, especially if you use store-bought pie crust. I love to bake, but I am intimidated by pie crust. And my kitchen is pretty tiny, so I don't have much room for rolling out a pie crust anyway.

Caramel Apple Pecan Pie

Ingredients:
2 9" pastry shells or pie crusts (don't buy Pilsbury... they have trans fat)
4 Granny Smith apples, peeled, cored and sliced (you could use a different kind of apple, but I love Granny Smith. You kind of need that tart to balance out the sweet from the caramel. And it says to slice them, but I just chop them into bite size pieces)
1/2 cup chopped pecans (you can omit these if you don't like nuts)
1/2 cup sugar
1/4 lb chopped Caramels (I use Werther's)
2 Tablespoons flour
1/4 cup milk
Milk and sugar for the top

Directions:
Preheat oven to 375 degrees. In a bowl, toss together apples, pecans, sugar, caramels, flour and milk.Spoon mixture into pie crust. Top with other pie crust. Pinch together edges. Cut slits into the top (our your initials to be fun). Brush top with milk and sprinkle with sugar (this just gives it a nice shimmer).

Bake until crust is golden brown, about 45 minutes.

Sound easy, huh? It definitely is! I hope you enjoy!

Upside Down Pumpkin Cake

At work last week, we had a "Steak Burn." I had never heard of a "steak burn" before, so I wasn't really sure what it was. Basically, we all had an extended lunch and my boss's boss, Ron, grilled steaks, chicken, potatoes, etc. The food was really good! And it was nice to have an extended lunch and play some Skip-bo with my co-workers. (If you have never played Skip-Bo, go to Target, buy it and play it...you'll be hooked for life).

Anyway, for dessert Ron brought a dish his wife made. It was absolutely delicious! My boss, Michael, requested several times during the Steak Burn that he email it to us. He did. I wanted to share the recipe since it was so yummy. I haven't made it yet, but it's definitely on my to do list.

Upside Down Pumpkin Cake

Ingredients:
1 29oz can Pumpkin
2 teaspoons Cinnamon
3 Eggs
1/2 teaspoon Ground cloves
1 3/4 cup Sugar
1 12oz can Evaporated milk
1 box Yellow cake mix with pudding
1 cup Chopped pecans
1 cup Melted butter

Directions:
Preheat oven to 350 degrees. In a bowl, blend pumpkin, sugar, spices, eggs and milk. Pour mixture into a 13x9 pan. Sprinkle cake mix and nuts over mix. Pour on melted butter and spread over whole surface. Bake for 60 minutes until firm throughout.

According to the recipe, this is best if made ahead of time and served the next day or later. It's not as good right out of the oven.

Oatmeal Pie

I have finally made the Oatmeal Pie! I've been talking about making this pie since our visit to Amish country last month. I did a simple search on Google for a recipe and came across one that claims to be from Charleston during the Civil War era. As most people know, pecan pie is a very popular pie, especially in the South. But according to this person, pecans were hard to come by during the Civil War so people substituted oatmeal. I did make one tiny adaptation to the recipe and added chocolate chips. I love anything chocolate and thought it would be good in this pie. This pie tasted so yummy and you feel slightly less guilty eating it because of the oatmeal.


Ingredients:
one pie crust
4 eggs
1 cup granulated sugar
2 Tablespoons flour
1/4 teaspoon salt
1 cup light corn syrup
1/4 cup melted butter
1 teaspoon vanilla
1 cup quick-cooking oatmeal (uncooked)
1 cup chocolate chip

Directions:
Preheat oven to 350 degrees.

Beat eggs until frothy.

Combine sugar, flour and salt in small bowl. (If not using chocolate chips, you can add 1 teaspoon ground cinnamon at this point). Add eggs; mix well. Add corn syrup, melted butter and vanilla. Mix in oatmeal and chocolate chips. Pour into uncooked shell and bake for 45 minutes.

PB Filled Cookies

I love anything chocolate and peanut butter. I saw a recipe on another blog (and I can't remember for the life of me what blog it was) for peanut butter filled cookies. They looked so delicious that I had to try them for myself. I also wanted to pass along the recipe.

Ingredients
1 1/2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 cup butter
1/2 cup brown sugar
1/4 cup peanut butter (we used crunchy, but creamy would work out great, too)
1 egg
1 Tablespoon milk (I ended up needing another splash of milk to make the dough stick together better)
2 teaspoons vanilla, divided
3/4 cup powdered sugar
1/2 cup peanut butter (again, we used crunchy, but in this case creamy peanut butter probably would have worked out a little better)
sugar for coating (I didn't do this step)

With a mixer, combine flour, cocoa powder, baking soda, 1/2 cup sugar, brown sugar, 1/4 cup peanut butter, egg, milk and vanilla.

In a small bowl, using a fork, combine powdered sugar, 1/2 cup peanut butter and 1 teaspoon vanilla. I again needed a splash of milk to hold this mixture together better. I think it's because I used crunchy peanut butter.

Flatten a tablespoon of the chocolate dough in your hand*. Roll a teaspoon of the peanut butter mixture into a ball and place in the center of the dough. Wrap the dough around the filling and place onto a parchment lined cookie sheet (I skipped the parchment and it wasn't a problem). Flatten the cookies with the bottom of a glass and gently press one side of each cookie into a small bowl of sugar (I skipped this step). Bake, sugar side up, at 350 degrees F for 8 minutes.

* I ended up having to put the dough in the freezer for a few minutes half way through because it was getting too warm and my hands were too warm so it just wasn't working out great. It might be good to put the dough in the fridge or freezer for 10-15 minutes before you start.

Gooey Chocolate Brownies

The other day Charles requested that I make brownies. We're big fans of fudgy brownies. I looked through all my recipes and decided to make the Gooey Chocolate Brownies. They were perfectly fudgy, chocolatey and delicious! They are also super easy to make and taste a whole lot better than any boxed brownie mix. Here's the recipe:

1 cup butter
2 cups sugar
1 cup flour
4oz unsweetened chocolate
4 eggs
1/2 cup to 1 cup chocolate chips

In a saucepan, melt butter and chocolate squares over low heat. Add sugar. Stir until dissolved. Remove from heat. 

Preheat oven to 350 degrees while allowing your butter-chocolate mixture to cool for 15-20 minutes.

Beat in eggs. Stir in flour and chocolate chips.

Pour in a 9x13 inch pan and bake for 20-25 minutes or until done.

Banana Bread French Toast

I had a few bananas saved in the freezer and Charles wanted me to make banana bread. A week or so after he asked me, I finally made it. Banana bread is simple and easy to make. As if banana bread isn't amazing on its own, I made banana bread French toast! I had it at a restaurant outside of San Antonio in October and I've had a recipe for it sitting on my computer for a while now. 

Here's how you can make it, too!


Ingredients:
1 loaf of Banana bread (I used the Betty Crocker recipe, but feel free to use whatever recipe you would like)
3 eggs
3 Tablespoons sweetened condensed milk (I didn't have any, so we just used milk and some sugar)
1 teaspoon vanilla

Whisk the ingredients together. Slice the banana bread. Heat a skillet on medium high. You can butter the skillet. I didn't and it didn't make that much of a difference. Dip the slices in the mixture so they are fully coated. Place on skillet and cook until each side is golden brown.

Kitty treats--2nd edition

Our first batch of kitty treats is almost gone, so it was time to make some more. They loved the last ones, but I had another recipe that I wanted to try out. The ones I made today are called Turkey Treats and are super easy to make.

Turkey Treats
Ingredients
1/2 lb ground turkey
1 small boiled and mashed sweet potato
1 teaspoon grated cheese (I used a mixture of Parmesan, Cheddar and Mozzarella)
1 beaten egg

Mix all the ingredients together. Scoop by half teaspoon (I actually did an overflowing 1/4 teaspoon) onto a lightly greased cookie sheet (I remembered this time!). Bake for 7-10 minutes at 350 degrees, until they are brown and firm, but not crunchy. According to the recipe, they freeze well.

It hasn't been treat time yet, so I'm not sure how the kitties will like them, but they smelled delicious to me.

Homemade treats

My friend Jenilyn makes homemade baby food for her daughter which made me think that I could make homemade kitty treats. And after you look at the ingredients on store-bought kitty treats, they are actually pretty disgusting. I made two recipes out of 4 that I settled on after Googling kitty treat recipes. One the kitties liked and the other they just nibbled at, so I consider that a failure.
The treats they liked are called Savory Cheese Treats. Here's what you'll need:
- 3/4 cup white flour
- 3/4 cup shredded cheddar cheese
- 5 Tablespoons grated Parmesan cheese
- 1/4 cup plain yogurt or sour cream (I used sour cream)
- 1/4 cup cornmeal (I used yellow cornmeal...I don't know if it matters)

Preheat your oven to 350 degrees. Combine cheeses and yogurt. Add flour and cornmeal. (I wasn't paying attention to the directions and measured the flour in the bowl first, so I just threw everything in at the same time). If needed, add a small amount of water to create a nice dough. (I had to add 4 Tablespoons of water to achieve a "nice dough").

Knead dough into a ball and roll to 1/4 inch. (I did this in small sections because I rolled it out on my cutting board and there wasn't enough space to do all the dough at once).

Cut into inch-sized pieces (I cut mine into smaller pieces) and place on a greased cookie sheet. (Don't skip the grease! I did and it was annoying to get the treats off the pan)

Bake for 25 minutes. (Since I made the pieces smaller, I baked for 20 minutes).

The second recipe had tuna and my house still smells like tuna. Yuck! The kitties didn't like these so much. Charles actually tried one and he said they just tasted like cornmeal. They were very hard. Here's the recipe, in case you want to try it for yourself.

Cat Crackers
- 6oz undrained tuna
- 1 cup cornmeal
- 1 cup flour
- 1/3 cup water

Preheat oven to 350 degrees. Measure all the ingredients into a bowl and mix thoroughly with your hands. Roll out to 1/4 inch thickness and cut into treat sized pieces. Place on a greased cookie sheet. Bake for about 20 minutes (I baked them for 15 minutes). Let cool.

Each recipe makes a good amount of treats, so you should be set for a little while. I'm storing mine in the fridge. This morning when I gave them a cheese treat, I poured a bit of chicken stock on them to soften them up a little to make it easy to chew. They are used to soft treats. They really enjoyed them.
